Kielbasa and Cabbage Skillet

Kielbasa is one of my favorite ingredients to cook with since it is delicious and very simple. I would normally use turkey kielbasa instead of pork though to cut some calories. I will be making this dish some time soon.

Ingredients
  • 2 pounds fully cooked polska kielbasa, cut in half lengthwise, then cut into 2 inch pieces
  • 1 tablespoon extra virgin olive oil
  • 1 head cabbage, coarsely chopped
  • 1 large sweet onion, cut into large pieces
  • 3 cloves garlic, minced
  • 2 teaspoons sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 teaspoons rice wine vinegar
  • 1 1/2 teaspoons dijon or brown grainy mustard
Directions
  1. Heat olive oil in a large nonstick sauté pan over medium-high and add kielbasa. Cook, without stirring for 1 minute. Then stir occasionally for about 3 minutes. Transfer to a plate with a slotted spoon.
  2. In the same pan with some of the rendered kielbasa fat, add the cabbage, onion, garlic, sugar, salt, and pepper. Stir to combine and cook for about 10 minutes, stirring occasionally.
  3. Mix in the vinegar and mustard; add the sausage back to the pan and cook for another 2 minutes to heat through. Taste and adjust seasoning, if necessary.
  4. Serve immediately on its own or over mashed potatoes.

Kielbasa, Pepper, Onion and Sweet Potato Hash

hashThis is one of my favorite recipes. It is healthy, delicious and very simple.

Ingredients

  • 1 (14 ounce) package turkey kielbasa, cut into 1/4 inch rounds
  • 2 peppers, diced
  • 1 onion, diced
  • 3 small or 2 large sweet potatoes/yams, peeled and diced
  • olive oil
  • salt and pepper

Instructions

  1. In a heavy bottomed skillet (I like to use my cast iron), heat 2 tbsp of olive oil over medium-high heat.  Add the sweet potatoes to the skillet and season with salt and pepper. Fry until brown and cooked through, around 8-10 minutes, stirring a few times to ensure even browning.
  2. In a separate skillet, brown the sliced kielbasa for around 5 minutes in 1 tbsp of olive oil over medium high heat.  Remove the kielbasa from the pan and set aside.  Add the peppers and onions to the skillet and season with a pinch of salt and pepper.  Cook for 5 minutes, or until softened, stirring occasionally.
  3. Add the cooked sweet potatoes and kielbasa to the skillet with the onions and peppers and mix everything together.  Serve nice and hot!
