This recipe is inspired by Grilled Green Tomato and Shiitake Sandwich, except I wanted to make a non-vegetarian version of it and it came out delicious! The following will make 2 sandwiches. (Pardon the crappy iPhone image – I am getting a new camera soon and will start taking better pix!)
1 glove of garlic, finely chopped
2 tbsp balsamic vinegar + a little to sprinkle on the sandwiches
2 tbsp olive oil
1/2 cup Worcestershire sauce
1 tomato, sliced
4-6 large shiitake mushrooms
2 chicken breasts
Salt and pepper to taste
1. Marinade the chicken for at least 30 minutes in Worcestershire sauce.
2. While the breasts are marinading, mix balsamic vinegar, olive oil, finely chopped garlic, salt and pepper in a shallow dish (or a small bowl). Coat the shiitake mushrooms in the mixture and immediately put to grill (we use our little Foreman Grill, it works great) for about 2 minutes. make sure to check after about a minute so the mushrooms don’t burn. Once you see the grill marks clearly, you can remove the mushrooms.
3. Once the mushrooms are done, grill the chicken breasts for about 4 minutes (this time may vary depending on thickness of your chicken breasts).
4. Cut the baguette bread in half and arrange spinach, sliced tomatoes, shiitake and chicken breast on the bread. Sprinkle the sandwich with some balsamic vinegar. Bon Appetite!
