Roasted Chicken on Salt

This is a very simple, yet interesting recipe. It can also be used with fish. My mom learned this method when she lived in China.



Whole Chicken


Preheat the oven to 350 F. Pour the salt into the bottom of a baking pan – so that it completely covers it and is at least 1/4 inch thick. Place chicken on top of the salt. Roast until ready.

Nothing else is needed, although, sometimes, I would rub the chicken with garlic. Do NOT put salt ON the chicken – it will be too salty. The chicken will absorb some salt from the bottom.
